Sodium alginate. Converts liquid into gel spheres when exposed to calcium. Mix with desired liquid for direct spherification (process requires Clorur), or mix in mineral water for inverse spherification (process requires Gluconolactat). Dose: 5g per kg.

For inverse spherification: Blend desired liquid with gluconolactat. Meantime, make salt bath by adding alginat to mineral water. Place a sieve in the mineral water, then add the gluconolactat preparation to sieve for 3 minutes. Lift sieve out of mineral water. The liquid will have spherified.
