Calcium gluconate and lactic calcium. Incorporates calcium into a medium without adding flavour. Will react with Alginat to convert a liquid into a gel sphere. Dose: 2g per kg.

For inverse spherification: Blend desired liquid with gluconolactat. Meantime, make salt bath by adding alginat to mineral water. Place a sieve in the mineral water, then add the gluconolactat preparation to sieve for 3 minutes. Lift sieve out of mineral water. The liquid will have spherified.
